So, I had a choice between 4 different cookies/candies to bake, but decided on this once I asked the opinion of both of my siblings. I would tell you what the other four options are, but I'm sure you'll see those soon, as I'm starting my second thesis book tomorrow. So here is the recipe I found for Chocolate Chip Cookie Dough Truffles. They are insanely good, and a little more difficult than your average cookie recipe, as are most candies, but really not that hard if you take it in steps. I was a little skeptical of making chocolate chip cookie dough without using any eggs and still having it taste as good, but believe me, this tastes just like the real thing, and no raw egg! Today I finished my first thesis book for the summer. My topic is Jane Austen, so I'm reading 4 of her books for my thesis, and I started with Sense and Sensibility. Although it was very long and could get a little boring at times, once you get about half way through it picks up very quickly and in the end, I absolutely loved it! I'm one for happy endings, which Jane Austen never fails to include. Plus, her style of writing is really beautiful, and I swear it improves your vocabulary within the hour.

I know, more chocolate chip cookies. I am kind of obsessed. But hey, I love to make cookies, and I absolutely love chocolate, so they are perfect. But this time it is different, because I made my own recipe. I started out with the original Nestlé Toll House recipe and changed up the ingredients according to information I looked up on what makes a chewier, cakier cookie, since that is what I like my cookies to be like. I think I hit it pretty dead on, just make sure that you don't leave them in the oven too long, because some of my cookies I did that for and they were crunchier. When I made the cookies, I used half butter and half shortening because it apparently is supposed to make for a cakier cookie, but I found that it didn't make much of a difference and I liked the butter taste better, so I changed it for you guys to all butter instead. I hope you enjoy my very own recipe for chocolate chip cookies!
Chocolate Chip Cookies will probably always be my favorite cookies to make. They are quick, easy, and absolutely delicious. Plus, as I've mentioned before, they would have to be my favorite tasting cookie dough as well, which is always a plus. Today I made Vermont Oatmeal Maple-Honey Bread as well, so I didn't feel like making something really extravagant that would take me hours, but I wanted to make something sweet for the house, so I made these. And, as I always like to do, I tried out a new recipe. Honestly, I think it is pretty similar to the Toll House recipe in taste, but they did turn out chewier than I've ever been able to get them, which I liked. These cookies have a subtly crisp outer with a soft and chewy interior that gives them a great texture. So if you like that in your cookie, try this recipe!
Today I really felt like baking, but I wanted to make something that would go to use, so I decided to make breakfast for my staff tomorrow morning, and what is better for breakfast than chocolate chip muffins! I made them mini so I would have enough, but they are absolutely delicious and have just enough chocolate in them to satisfy that sweet tooth of yours early in the morning, especially since they are so quick to make! You can use muffin tin liners or just take the easy route like me and spray your muffin tins. Enjoy!
This Sunday is Father's Day and I never really know what to get my dad. Father's Day is one of those holidays that you're really supposed to give heartwarming, thoughtful gifts, and I can never think of what to get him. But this year will be different, because my dad LOVES fudge. Anytime my mom goes somewhere without my dad and sees a store that sells fudge, she always stops by to get him some, and he always eats it all up in a day. So the other day I tried to super discreetly ask him if he could have any flavored fudge in the world right now, what flavor would he ask for, and he said chocolate. Classic. It's kind of his style. No nuts or anything? Nope, just chocolate. So that's my dad's Father's Day present this year, and let me tell you, it's gonna rock.
Now to get to the actual recipe. Notice how I specifically put the word "foolproof" in the title of the recipe. It's because as long as you have sweetened condensed milk in your cupboard, anyone can make this recipe, it's super duper easy. All you do is melt together the sweetened condensed milk with chocolate chips, a dash of salt, vanilla extract, and any add-ins of your choice. Then you refrigerate and cut into squares and you're done! So simple, yet so delicious and decadent. And I was originally worried it may just taste like a hardened block of semisweet chocolate, but believe me, it doesn't! It really has that stereotypical fudge flavor that is just to die for. Enjoy! If you read this blog a lot, you know that I LOVE peanut butter. This recipe takes my love even one step further by adding Nutella. They're so good!! All you do is make a peanut butter cookie dough and swirl in a quarter cup of Nutella with a butter knife, which at first looked like it was going to be a hard job, but it's really not. The hardest part of this recipe is waiting while one of the best cookie dough's ever sits in your fridge to chill.
These cookies are not only extremely yummy, but so cute and pretty. I mean, just look at them. They look so Martha-Stewart-y (which is not at all ironic if you look below to see where I got the recipe from). They remind me a bit of those shortbread cookies with chocolate filling in the center from Traders Joe's, and if anyone reading this knows what cookies I'm talking about, you'll go grab your ingredients right away. The cookie only has 5 ingredients to it and it's still so yummy!
Coconut is underrated. It is just so good, and yet it is used so rarely. Well I guess I can't say rarely, since it's still used somewhat often, but I personally feel as though it should be used as often as chocolate, it's really really good.
Anyways, these macaroons are absolutely delicious! They are really quick and easy and make a ton of cookies, so it is one of my favorite recipes! The chocolate really adds flavor to them. They puff a lot in the oven, creating a sort of hard shell on the outside and soft chewy goodness on the inside. And although it makes nearly 4 dozen cookies, these go by real fast! Nutella, Nutella, Nutella, is all I have to say about these cookies. Except that wouldn't tell you that much so I'll explain further. My point is, these cookies have a lot of Nutella in them, which is just awesome. These cookies use only THREE ingredients, seriously! And they're absolutely delicious! The Nutella in the middle melts in your mouth while your eating it, so good! So if you have a giant jar of Nutella in your pantry like we did because Costco only sells huge quantities of everything, or for whatever reason, I've found a wonderful use for all that Nutella, finally (seriously it's been sitting there for months, this recipe was perfect).
I came home today and unfortunately, due to just how busy I am going to be this Sunday, and just how behind I am in my bio studying, I had to go right to homework. Not your ideal Friday afternoon. I did homework for many hours, had dinner, then studied for several hours, then it was already 10 o'clock! I came downstairs, looked around our mess of a kitchen, and said, "This is a perfect time to make cookies!" Of course, that is not true in any sense, but I made cookies nonetheless, mostly just because I was craving cookie dough to an extreme extent.
I decided to steer away from Nestlé Toll House and try this recipe. I had tried it once before, but I made them to bring into class, so I didn't really get to see if they turned out well or not. So I tried them again, and man oh man are these cookies good. On allrecipes.com, they have 4.5 stars from over 7,000 reviews! With that many people rating the cookie, 4.5 stars is pretty darn good I would say. And after making the cookie myself, I think the only excuse for less than 5 stars is extremely stubborn people who can't seem to accept the fact that they've found a new favorite chocolate chip cookie recipe. Reading back on that sentence, that is a really lame reason for why someone may give it 4 stars, so pretty much you get my point, I don't see why you would. They taste like a Shaw's Bakery cookie, which if you've ever had one of those big, soft, chewy cookies, you will start grabbing your ingredients right now. I made them a bit smaller, of course, but that same soft texture that I've been aiming for for years! These cookies are specifically labeled "Soft Batch" Chocolate Chip Cookies because they come out with a really soft texture even after a day of sitting in the cookie jar. They use pudding mix, which contains gelatin to give these a subtle unique flavor to them that is simply to die for! My new favorite chocolate chip cookie recipe awaits you, and that's saying a lot! |
