Coconut is underrated. It is just so good, and yet it is used so rarely. Well I guess I can't say rarely, since it's still used somewhat often, but I personally feel as though it should be used as often as chocolate, it's really really good.

Yesterday was National Chocolate Chip Day! I felt the need to celebrate, and my dad had previously asked for oatmeal raisin cookies, so I decided to compromise by making him oatmeal raisin cookies and reserving half of the batter for chocolate chips. See, I'm not actually a big fan of raisins, so it worked out great! You can also use chocolate chips for this recipe and the cookies will still be delicious! Completely up to you!
Nutella, Nutella, Nutella, is all I have to say about these cookies. Except that wouldn't tell you that much so I'll explain further. My point is, these cookies have a lot of Nutella in them, which is just awesome. These cookies use only THREE ingredients, seriously! And they're absolutely delicious! The Nutella in the middle melts in your mouth while your eating it, so good! So if you have a giant jar of Nutella in your pantry like we did because Costco only sells huge quantities of everything, or for whatever reason, I've found a wonderful use for all that Nutella, finally (seriously it's been sitting there for months, this recipe was perfect).
Have you ever heard of Biscoff? Well if you haven't, go to your local Shaw's or Star Market now, because it is simply revolutionary. This company called Lotus, which is mainly European, creates these Speculoos cookies, which is apparently a biscuit that is a specialty in Germany. Well whatever it is, it is really really good! But here comes the best part! They decided to make these wonderful cookies into a spread so you can put it on anything! It is SOOOOO good. It's called Biscoff spread, and although it's mainly European, you can find it in some of the big supermarkets around here. I would highly suggest it.
These blondies use the Biscoff spread I just raved about above, as well as white chocolate chips, to create a creamy and buttery taste that is absolutely delicious! Especially right out of the oven, these are to die for, I promise. You can also use Trader Joe's cookie butter as Biscoff, they are almost exactly the same thing. Happy Mother's Day! Today for Mother's Day I had to run off to skating early in the morning and my dad had softball, so we couldn't do what we normally do, which is get in my mom's bed and give her coffee and gifts and hugs. Instead, I came home from skating and made this wonderful coffeecake, cut up some fruit, made scrambled eggs, and had a wonderful brunch all together for Mother's Day. Plus, it's absolutely beautiful out, which makes it even nicer!
This crumb coffeecake is absolutely delicious, plus it is so quick and easy! I feel like I say that about all my recipes, but do keep in mind that that is a quality I look for when picking out recipes, so that's most likely why. I'm being completely honest when I say it though. It took maybe 20 minutes tops for this huge, delicious coffeecake to get in the oven for our Mother's Day brunch. You may feel while making it (like I did), that you have WAY too much crumb topping, but it's not as crazy as you think and it's totally worth it in the end, so just believe me when I say: USE IT ALL! Happy Birthday to my younger brother, Elliot! I was so excited to make him his cake today, and I had all these wonderful ideas in mind. Maybe chocolate hazelnut cake, coconut cake, lemon cake. So I go up and ask him, "What kind of cake do you want for your birthday?" His reply: "Just go to Shaws, Katherine." Seriously?! I haven't convinced this kid yet that I AM SO MUCH BETTER THAN SHAW'S?! Of course, I did not take this advice. Instead, I merely pretended those words were not spoken and asked him one more time, "Elliot, what kind of cake do you want for your birthday?". "Vanilla with white frosting". Ok, I can do that. Simple, but delicious.
This yellow cake can be tricky, but man oh man it is delicious. Make sure, and I cannot stress this enough, that all your butter is very well creamed into the mixture before you add other ingredients. Scrape the sides and bottom of the bowl, because if it is not, it will clump and melt in the oven and that will result in holes in your cake. Believe me, I learned the hard way. Nevertheless, if this doesn't happen, this cake is really dense and moist and delicious! I needed to leave mine in the oven a bit longer, but it actually just ended up being really moist because it was slightly undercooked (which I liked!). In the pictures, I used my previous recipe for Buttercream Frosting to frost the cake, which I left a link to down at the bottom. If I had been able to choose, however, the Easy Chocolate Buttercream recipe would have gone really well with this cake as well. This recipe would be a classic example of me wanting to test out new french recipes after returning home from my wonderful trip to Paris. Crepes are absolutely delicious, super quick and easy, and can be adapted to fit anyone's specific desires. I actually made these crepes for dinner and then had just enough left over to make myself one for dessert, which is the crepe you see in the picture. These crepes can be either savory or sweet, it's totally up to you! If you would like to make them savory, you can fill them with basically anything you want. For dinner, I filled mine with prosciutto and melted emmenthaler cheese, and topped it with arugula. They were absolutely delicious! My goal was to replicate a savory crepe I ate in Versailles for lunch, and I must say I think I did a pretty good job. If you want your crepes to be sweet, you can fill them with any combination of nutella, melted chocolate, whipped cream, fruit, coconut, ice cream, and loads more! In the picture, I spread a thin layer of Nutella on the crepe and stuffed it with sliced strawberries. Then, I sprinkled powdered sugar on top and voila, you have a delicious sweet crepe! Plus, it only takes 7 minutes to make!
Finally got to bake again for the first time in what felt like forever after having gone to France over April vacation! My goal is to try a bunch of new french recipes now that I've tried all these wonderful dishes in France! These are not very french at all, but they're really good! If you think peanut butter cookies are good, then try just adding a bit of honey and they are simply perfect! Plus, my house smelled divine after putting them in the oven!
