Anyways, my point is try these out! It's summer and zucchini are beautiful right now, and I personally think it's pretty cool to make cookies that taste like cookies but actually include vegetables. The best part is making someone try it without telling them the secret ingredient, then telling them they just ate vegetables without even knowing, hehe :).
Zucchini Chocolate Chip Cookies
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, lightly packed
- 2 eggs, beaten
- 2 tsp. baking soda
- 1½ tsp. ground cinnamon
- 1 tsp. salt
- 4 cups all-purpose flour
- 2 cups shredded zucchini (about 2 small zucchini)
- 2 cups semi-sweet chocolate chips
Preheat the oven to 350 degrees F. Spray cookie sheets with cooking spray or line with parchment paper.
Cream butter and sugar together in a large mixing bowl until light and fluffy. Add the eggs, baking soda, cinnamon, and salt into the butter mixture; mix well. Add in the flour one cup at a time until fully incorporated. Scrape down the sides of the bowl when necessary. Stir in the zucchini. Fold in chocolate chips.
Drop by tablespoonful onto cookie sheets, leaving about 2 inches in between cookies. Bake for 15 minutes, or until just golden (mine were not uniformly golden but instead had golden “patches”, which then set up beautifully, so do not over bake). Let stand to cool for 2 to 3 minutes, then remove and place on wire racks to allow to cool completely.
