Chewy Chocolate Cookies
- 2¼ cups flour
- ¾ cup cocoa powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1¼ (2½ sticks) cups butter, softened
- 1¾ cups granulated sugar
- 2 large eggs
- 1½ tsp. vanilla extract
- granulated sugar, for rolling
In a medium bowl, whisk together the flour, cocoa powder, and baking soda. In the bowl of a stand mixer, beat the butter and sugar together until creamy, about 2 minutes. Add the salt, eggs, and vanilla extract and beat until combined. On low speed, gradually add the flour mixture and mix until no streaks remain. Gather the dough and wrap in plastic wrap. Refrigerate until firm, about 1 hour, or overnight.
Remove the dough from the refrigerator and scoop about 1½ tablespoons of dough into balls, then roll in granulated sugar and place on parchment-lined baking sheets. Bake until cracks form and mostly flat. They will be soft to the touch, but they harden and flatten out more while cooling. Cool on racks for 10 minutes before removing to a wire rack to cool completely.
