Peanut Butter Chocolate Chip Blondies
- ½ cup (1 stick) butter
- 1 cup brown sugar, packed
- 1 egg
- ½ cup creamy peanut butter
- 2 tsp. vanilla extract
- 1 cup all-purpose flour
- 1 cup semisweet chocolate chips, plus more for sprinkling
Preheat the oven to 350 degrees F. Line an 8x8" pan with aluminum foil with an overhang on two sides.
In a large, microwave-safe bowl, melt the butter. Add the brown sugar and stir to combine, Add the egg, peanut butter, and vanilla extract and mix well. Add the flour and mix until just combined, then fold in 1 cup of chocolate chips.
Pour the batter into the prepared pan and spread to the edges. Sprinkle the remaining chocolate chips on top of the blondies. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Let the bars cool in the pan for 30 minutes before slicing.
