Today I opened the cookie jar after having made my Chocolate Chip Cookies two days ago and found only one cookie left. However, I, being the avid baker I am, was not bothered by this at all. It means I get to make more cookies! As always, I went with a new recipe this time, and ventured away from the typical chocolate chip cookie for a more unique recipe. This recipe sure is unique, but let me tell you, that does not mean it is not absolutely delicious! It has just the right amount of cinnamon and the use of all brown sugar instead of half brown and half white compliments the cinnamon in the cookie very well. I used a bag of Hershey's cinnamon chips, but you can use any brand you can find, really. Enjoy!

Chocolate Chip Cookies will probably always be my favorite cookies to make. They are quick, easy, and absolutely delicious. Plus, as I've mentioned before, they would have to be my favorite tasting cookie dough as well, which is always a plus. Today I made Vermont Oatmeal Maple-Honey Bread as well, so I didn't feel like making something really extravagant that would take me hours, but I wanted to make something sweet for the house, so I made these. And, as I always like to do, I tried out a new recipe. Honestly, I think it is pretty similar to the Toll House recipe in taste, but they did turn out chewier than I've ever been able to get them, which I liked. These cookies have a subtly crisp outer with a soft and chewy interior that gives them a great texture. So if you like that in your cookie, try this recipe!
I am always looking for reasons to make cookies, especially since we are leaving for New Jersey in a couple of days and I don't want them to go to waste. These won't, however. My brother asked three separate times for a cookie, all times in which I had to say no because 1) I hadn't frosted them 2) I hadn't put sprinkles on them and 3) I hadn't taken my pictures yet. When he finally got a cookie, I asked him if they were any good, to which he replied, "Oh yeah, these are amazing". Then he had like three more.
So I hope I've proven a point here. These cookies are amazing. They are named "Lofthouse Soft Sugar Cookies" because they are supposed to be a copycat recipe of the Lofthouse Cookie brand, which I think they resemble very closely. The sour cream does the trick. And they may seem undercooked when you take them out of the oven but they are supposed to be soft, so they are probably not. I made these cookies for the USA v. Belgium FIFA World Cup Game, but you can make them for any occasion: Halloween, Christmas, birthdays, anything! Hope you like them (which of course you will), and I hope the USA wins! I made these cookies right after I made my Maple Butter Cupcakes, in which you need 6 egg yolks, so since I felt bad throwing out 6 perfectly good egg whites, I made these! They are very good, and a little chewy, so if you're not a fan of that these may not be for you. They're also really fun to make because you can try out basically any flavor you want and you get to pipe them, which I love. I used vanilla extract, creamy hazelnut flavor, and imitation maple flavoring for mine. I liked the vanilla and hazelnut the best and would definitely recommend those. You can also try using cocoa if you would like for chocolate meringues. Enjoy!
If you read this blog a lot, you know that I LOVE peanut butter. This recipe takes my love even one step further by adding Nutella. They're so good!! All you do is make a peanut butter cookie dough and swirl in a quarter cup of Nutella with a butter knife, which at first looked like it was going to be a hard job, but it's really not. The hardest part of this recipe is waiting while one of the best cookie dough's ever sits in your fridge to chill.
These cookies are not only extremely yummy, but so cute and pretty. I mean, just look at them. They look so Martha-Stewart-y (which is not at all ironic if you look below to see where I got the recipe from). They remind me a bit of those shortbread cookies with chocolate filling in the center from Traders Joe's, and if anyone reading this knows what cookies I'm talking about, you'll go grab your ingredients right away. The cookie only has 5 ingredients to it and it's still so yummy!
Coconut is underrated. It is just so good, and yet it is used so rarely. Well I guess I can't say rarely, since it's still used somewhat often, but I personally feel as though it should be used as often as chocolate, it's really really good.
Anyways, these macaroons are absolutely delicious! They are really quick and easy and make a ton of cookies, so it is one of my favorite recipes! The chocolate really adds flavor to them. They puff a lot in the oven, creating a sort of hard shell on the outside and soft chewy goodness on the inside. And although it makes nearly 4 dozen cookies, these go by real fast! Yesterday was National Chocolate Chip Day! I felt the need to celebrate, and my dad had previously asked for oatmeal raisin cookies, so I decided to compromise by making him oatmeal raisin cookies and reserving half of the batter for chocolate chips. See, I'm not actually a big fan of raisins, so it worked out great! You can also use chocolate chips for this recipe and the cookies will still be delicious! Completely up to you!
Nutella, Nutella, Nutella, is all I have to say about these cookies. Except that wouldn't tell you that much so I'll explain further. My point is, these cookies have a lot of Nutella in them, which is just awesome. These cookies use only THREE ingredients, seriously! And they're absolutely delicious! The Nutella in the middle melts in your mouth while your eating it, so good! So if you have a giant jar of Nutella in your pantry like we did because Costco only sells huge quantities of everything, or for whatever reason, I've found a wonderful use for all that Nutella, finally (seriously it's been sitting there for months, this recipe was perfect).
Finally got to bake again for the first time in what felt like forever after having gone to France over April vacation! My goal is to try a bunch of new french recipes now that I've tried all these wonderful dishes in France! These are not very french at all, but they're really good! If you think peanut butter cookies are good, then try just adding a bit of honey and they are simply perfect! Plus, my house smelled divine after putting them in the oven!
