White Chocolate Chunk-Macadamia Cookies
- 1 cup (2 sticks) butter, softened
- ¾ cup white sugar
- ¾ cup brown sugar
- 2 eggs
- 2 tsp. vanilla extract
- 1 tsp. salt
- 1 tsp. baking soda
- 3 cups flour
- 9 oz. white chocolate chunks
- 1 cup macadamia nuts, chopped
Preheat the oven to 350 degrees F. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugars until fluffy. Add the eggs and vanilla extract and beat until combined. Add in the salt and baking soda and mix well. Add the flour, one cup at a time, until incorporated; stop to scrape the sides of the bowl when necessary. Add the white chocolate chunks and macadamia nuts and beat for about 30 seconds, or just until distributed evenly.
Roll tablespoon sized balls of dough and place on parchment-lined baking sheets. Bake in preheated oven for 9 to 12 minutes. Allow to cool on baking sheets for 5 minutes before removing to a wire rack to cool completely.
