Honey Roasted Peanut Chocolate Chip Cookies
- 1 cup (1 sticks) butter, softened
- 1 cup brown sugar, packed
- ½ cup white sugar
- 1 egg
- 1½ tsp. vanilla extract
- 2 Tbsp. honey
- 1 tsp. salt
- 1 tsp. baking soda
- 3 cups flour
- 1½ cups chocolate chips
- ¾ cup honey roasted peanuts
Preheat the oven to 375 degrees F and line several baking sheets with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars until fluffy. Add the egg and vanilla and beat well. Add the salt, baking soda, and flour, one cup at a time, until well combined. Fold in the chocolate chips and honey roasted peanuts.
Using a cookie scoop or your hands, roll heaping tablespoons of dough into balls and place on the prepared baking sheets, about 1½ inches apart. Bake for about 10 minutes, or until browned on the edges and set in the middle.
