Cinnamon-Oatmeal Cookies
- 1½ cups all-purpose flour
- 1 tsp. baking soda
- ½ tsp. salt
- 2 tsp. cinnamon
- ¾ cup (1½ sticks) butter
- 1 cup light brown sugar, firmly packed
- ½ cup granulated sugar
- 2 tsp. vanilla extract
- 2 large eggs
- 2 cups old-fashioned rolled oats
- 1 cup cinnamon chips
Preheat the oven to 350 degrees F and line 3 baking sheets with parchment paper; set aside.
In a medium-sized bowl, whisk the flour, baking soda, salt, and cinnamon; set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugars until fluffy. Add the vanilla extract and eggs and beat until well combined. Reduce mixer speed to low and gradually add the flour mixture, then beat in the oats. Add the cinnamon chips and mix until thoroughly combined.
Drop dough by the heaping tablespoon onto the parchment-lined cookie sheets. Bake in the preheated oven for about 15 minutes, or until slightly golden. They will firm up as they cool. Let cool on baking sheets for 5 minutes before removing to a wire rack to cool completely.
