Chocolate Chocolate Chip Cookies
- ½ cup (1 stick) unsalted butter, room temperature
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 cup all-purpose flour
- ½ cup + 2 Tbsp. unsweetened cocoa powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup semi-sweet chocolate chips
Cream the butter and sugars together with a stand mixer on medium speed until light and fluffy. Scrape down the sides and bottom as needed. Beat in the egg and vanilla until combined, scraping down the sides as needed. In a separate bowl, combine the flour, cocoa powder, baking soda, and salt. Slowly mix it into the wet ingredients. The dough will be very thick. With a rubber spatula, fold in the chocolate chips. Chill the dough for 2 hours. Near the end of the chilling time, preheat the oven to 350 degrees F.
Drop cookie dough onto parchment lined baking sheets and bake for 10 minutes in the preheated oven. Let cool on baking sheets for one minute before transferring to baking racks to cool completely.
