In my description of these cookies below, I have them as 'melt-in-your-mouth' cookies, and I could not be any more serious. One bite, and it just melts, but in the best way possible. Just wonderful. Great for Christmas (or any other time of the year, as well).
Butter Cookies
- 1 cup butter, softened
- ½ cup confectioners’ sugar, plus extra for dusting
- ¼ cup cornstarch
- 1½ cups flour
Preheat the oven to 375 degrees F.
Whip butter with an electric mixer until fluffy. Stir in confectioners' sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes.
Drop about 1½ teaspoons of cookie dough 2 inches apart on an ungreased cookie sheet. Press your thumb down in the middle of each cookie to make a slight divot (optional). Bake for 12 minutes; cookies should be slightly firm but not at all browned. Dust confectioners’ sugar on top of cookies while still warm. Cool on wire racks.
