Brownies
- 3 ounces unsweetened chocolate
- ½ cup butter
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla extract
- ¾ cup flour
- ½ cup chocolate chips
- ½ cup chips or nuts of your choice (optional; butterscotch, peanut butter, toffee, etc.)
Preheat the oven to 350 degrees F. Grease a 9x9 inch earthenware baking dish with non-stick cooking spray. Melt the unsweetened chocolate and butter in a microwavable bowl. Heat until the butter is melted and then stir until all the chocolate is completely melted, placing back in the microwave if necessary. Add the sugar and mix well. Add the eggs and combine. Mix in the vanilla extract. Add the flour, making sure it is combined evenly throughout the batter. Add the chocolate chips and any other chips of your choice (I used mini peanut butter cups from King Arthur Flour that worked very well).
Pour the batter into the prepared pan and bake for 35 minutes. Remove the brownies from the oven and allow to cool before cutting. Serve and enjoy!
