Macadamia Oatmeal Chocolate Chip Cookies
- ¾ cup butter
- 1 cup brown sugar
- ½ cup white sugar
- 1 egg
- 1 tsp. salt
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1¾ cups all-purpose flour
- ½ cup rolled oats, finely ground in a food processor
- 1 cup milk chocolate chips
- 1 cup macadamia nuts, toasted and roughly chopped
Preheat oven to 350 degrees F. First, chop up your macadamia nuts and place them on a baking sheet in the oven to toast them for about 5 minutes, or until just slightly toasted.
In a medium-sized, heatproof bowl, melt the butter in the microwave for about 1 minute. Add in the sugars and egg and mix well. Add the salt, vanilla extract, and baking soda. Add in the flour and ground oats and mix until combined. Fold in the chocolate chips and toasted macadamia nuts, making note that if your macadamia nuts are still hot from being toasted, they may melt the chocolate chips and you might want to wait a couple minutes.
Drop tablespoonfuls of dough onto parchment lined baking sheets. Bake in the preheated oven for 8 to 10 minutes, or until evenly browned (these cookies will be pretty brown in color). Let cool on baking sheets for 5 minutes before removing to a wire rack to cool completely.
